Tarragon
(Artemisia dracunculus)
An herbaceous perennial, grows approx 2 feet tall. Narrow twisted, green leaves growing from multibranches.
Will grow in full sun but does better in semishade. Propagate from root cuttings or by division. Protect in cold climates. Make new plantings every 3 to 4 years
Use fresh young leaves and stem tips. Flavour is lost when tarragon is dried.
Use in salads, marinades, and sauces.
